SATURDAY AND NOWHERE TO GO

 OK... truth be known I have bugger all to yabber on about.

It's a weekend that we might have gone away for a 2-3 day break, but thanks to the latest Covid outbreak, we are stuck at home.

I'm already over it.  Last year it didn't feel so boring and restrictive.  This time around, it's just a fag.

There is so much I want to get done before summer gets here, but none of it can happen until we get to Level 2 or 1.

Painting and carpet, to name just a few things on the 'to do' list.  I can't believe  how bloody long it is taking to get the damn painting company here.  I contacted them MONTHS ago FFS.  They have to do their job before anything else can be done.  Grrrrrr.

I got a lovely wee gift in the mail yesterday:

Right, I'm gunna roll over can catch some more Zzzzz's now.  Or read the news.  One or other.

12.25 pm:  We have literally done NOTHING this morning!
Up.  Showered, washed and dried hair. That's it!
No motivation to a damn thing.

And I'm freezing, even though it looks to be a lovely day out there.  Might have a nap after lunch, it's exhausting doing nothing.

No nap.  I went into my sewing room and did some 'housework'.
That has taken me a good couple of hours.

I even remembered to put the pork belly in the oven!  
I function so much better in the afternoons.  It's like:  I AM NOT A MORNING PERSON at all.  😣😛😉

ABOVE:  "oink".  Dinner this evening shall be Pork Belly, Baked Carrot dish, mashed potatoes, peas, mixed veges and Brown Onion gravy on top.

Well... our dinner was amazing.  We are both stuffed now.  Time to sign off and go to bed.

    I think it best to throw on a hat and coat and go for a quick walk when one feels unsettled. Clear your head a bit. I know how you feel, I am so done with wearing a mask but I will, in fact I double mask, but I am so done with it all. And that is the only way I am being inconvenienced - wearing a mask, so I feel pretty dang lucky, my heart aches for those truly sick with covid and the medical staff across the world. Hang in there Chris...we'll overcome it one day. XO, Ky Girl

    When you've got nothing to do, do it! Ive finally bought a piece of pork belly. I know you've cooked it before Chris. Any suggestions? Kj

    1. Slice a criss cross pattern in the fatty top, just deep enough to get to the meat underneath. Smother the entire piece in oil, sprinkle salt on the fatty top, lay it on a tray, inside a baking dish. Oven at 160 deg C for about 2.5 hours, then turn the temperature up to 180 and cook for a further hour or so. If it hasn't cracked on the top (the fatty bit) turn the grill on and grill it... WATCH IT ALL THE TIME SO YOU DON'T BURN IT! Once it's bubbled up and crispy, take it out. Have with veges and gravy, or apple sauce (or both). The 'tray' is one you put cooked baking on to cool down.

    2. If you only have a very small piece of pork belly, cook it for less time, trial and error there. I am only used to cooking a big piece.

  8. Ive had kovly day in craft room making cards, strong winds so no lawns done which was plan but did get washing dry glsd used 3 pegs on everything cause else i probably checking neighborhood for my clothes. Hope u got a nana nap.

  10. I had Pork Belly Flatbread at Happy Hour today. If I EVER see Pork Belly on a menu I buy it - due to you of course. They don't sell it in stores, even the butcher was perplexed when I wanted to buy it.
