HAPPY MOTHERS DAY... AND A RECIPE!


I hope all you Mum's have a wonderful day today. We deserve it.
No one warned us that our gorgeous new baby would morph into a grizzling toddler, a snot nosed kid, a grotty teenager then to top it all... a KNOW IT ALL Adult! Oh well..... I am living for the day I can get senile and drive them all CRAZY.
There are of course moments along the way when you think they are quite nice... MOMENTS people, moments.
I am going to share with you one of my ALL TIME favourite recipes!
Too bad if you sooooo don't wanna see a recipe.
SALMON QUICHE
Serves 4
1/2 cup standard flour
4 eggs, lightly beaten
1/4 teaspoon baking powder
2 cups milk
75 grms butter, melted
1 Small onion, chopped
440 grms salmon (or smoked fish)
1 cup grated tasty cheese
1 Tablespoon chopped chives
1. Sift flour and baking powder into a large bowl. Make a well in the middle and stir in combined eggs, milk and butter.
2. Add the fish, onion, cheese and chives. Mix well. Pour mixture into a greased, 24cm ovenproof quiche dish.
3. Cook in a moderate oven at 180oC (350oF) for about 45 minutes, or until set. Garnish with chopped parsley, tomatoes etc.
This dish is totally delicious! I made it last night with smoked fish. edit... it wasn't anywhere near as nice with the smoked fish! Salmon is better.
I usually double the recipe for just Stew, me and the two kids.
You can double or triple the recipe to suit how many you are feeding.... just bake it a bit longer !
TODAY: no real plans. Amanda and Andrew are here... will wait and see.
I got breakfast in bed.. that was nice. I didn't NEED all that food, but nice anyway!
Amanda and Andrew went out for a couple of hours to check out Botany Shops, they took B and G with them. Stew and I loved every minute on our own! We havn't had that for years! It wasn't long enough.
I have heard from 5 of my big kids today... I am not holding my breath for Russell to ring me... he never does. Not even on my 50th Birthday did I hear from him. Nice boy that.
*sigh*... in all it's been a nice day.... hopefully this evening will be pleasant too.
I wonder what's for dinner? I am not cooking! lol
End of Day: dinner was so nice! Stew did roast chicken and veges.... our visitors have left... and we had a lovely visit with them too. So in all a neat day. nite nite.

  1. Happy Mother's day to you Chris! I think you deserve an award for bringing up your grandchildren as wonderfully and with as much love as you do.....they are lucky kids. I will have a go at making that recipe next days off.
