SHOPPING TODAY

 Right.

I'm gunna go to the supermarket this morning and find Cauliflower Rice.

Sounds disgusting.

But, from everything I've read, it might be a good option to replace potato, pasta and real rice.

I read you can use it as a base for pizza as well.

So, I'm perfectly happy to give it a go.

I'm also going to find some recipes for Almond Flour 'bread'.  Thanks for that idea Lynda.

It's quite a long time since I tried to delete carbs and sugars from our diet.  It's bloody hard!

I'm scratching my head coming up with ideas, so more research is needed.  Any main meal ideas would be most welcome!

Salads and vege stir fry is about all I can come up with!

I will probably go for a walk again today too... it's certainly a good pick me up.  Even on my own.  Going over to Cambridge to walk is on the back burner at the moment.

I don't think I have the energy for longer walks right now, plus with Field Days on right now, traffic is even worse than usual.

So, that's me for now.  Just an average day  here.


 
10.40 am:  Shopping is done.

I found what I was looking for... plus $100 more 'stuff'.  lol

ABOVE:  I checked out the cooking books at KMart.  None took my fancy, plus recipes online are free.
Though I must say, those books were very, very well priced!

ABOVE:  Next was the supermarket, where I found a fresh version of Cauliflower Rice.  Might try that one this evening.

ABOVE:  Then I found the frozen stuff.   Got both brands, might as well compare eh?

Then I headed home.  And saw this by our front door.


On the front of the bag is written:
CHRISTINA HARVEY
ROOM 401
GRAND MILLENIUM.

That's the hotel I stayed in while I was in Quarantine in Auckland, on my way home from Australia.
????????????????

ABOVE:  And THIS is what was inside the bag!
I'm like... no note?  No explanation.  I think I will have to ring the hotel to find out why I've been sent this?
Puzzling.
It's rather cute though.  😊  AND... how did whoever is responsible for this know I love fish/nautical stuff?????  Or was that just a coincidence? 

I just thought of something!  What if someone sent me that, to the Hotel, and they have only just gotten around to sending it to me?

THAT'S a possible explanation too.

Puzzle solved.  Seems Lacy had the hotel bag from when I was in Quarantine.  She used it today to put that platter in!  WOW, thank you so much Lacy.
The fish platter is gorgeous.  

3 pm:  No walk today, it's been pissing down with rain since I arrived home from the supermarket.
While I don't mind walking in the rain usually, I just didn't feel like getting all wet today.

So, I've been fluffing around in the house, doing a little housework and so on.  Nothing riveting.

ABOVE:  This evenings dinner.  Chicken Kiev, steamed cabbage, Haloumi Cheese, Carrot/Tomatoe/Capsicum/fresh herbs, and CAULIFLOWER RICE.

I put some Garlic Butter and Cream Cheese with the cauliflower rice.

And what did Stew and I think of the 'rice'?

WE LOVED IT!   Very surprised just how much we enjoyed it.
It will definitely be on our plates most nights from now on.

Oh and that was Stew's plate, not mine.  I had half the amount he had, and that was plenty.

We tried the Woolworths brand of CR this evening.  I'll try Birds Eye tomorrow.

SPARKLING:  Oh hell no!  DCR still stands for DIET COKE ROCKS.  Forever.  😂😅😆

I'm done for the day.  Another day where food choices were great.

  1. Cauliflower rice is an acquired taste I buy whole cauliflower blitz pulse it in a whizz I fry onion garlic then add it seriously only a few minutes I add flour egg make fritters.

  3. I cook the cauli rice in a round bottom frypan (kind of a wok shape) in a little oil. I add salt and pepper and sometimes a little onion first or peas etc. Remember it's just a base for a tasty curry so doesn't need lots of flavour. Yes, it's not rice but once you get used to it it's hard to go back to rice! Meals can be exactly the same as anything you normally make but instead of mashed potato or rice etc try cauliflower cheese or just lots of other vegetables on the plate. I hardly ever buy potatoes. I'm also getting back to low carb right now so I'm right on board with all of this too. While we've stayed reasonably low carb, too many things have slipped back in lately and I've gained weight. Story of our lives huh?

  5. Personally not a HUGE fan of cauliflower rice but it is okay. Low carb is such a big thing now that there are tons of books & online recipes & resources, it is just a matter of taking the time to go through it all. Initially it will take longer to prep & cook meals because you have to change things up from what you have been doing for years but once you are used to it, I am sure it will become second nature. Get a couple of good curry (don't have to be hot) recipes under your belt and get used to not having rice or naan with it. Some stuff is just pre-conceived habits eg rice with curry, popcorn at the movies etc.

    Cook the cauliflower rice until soft. Whizz up with a hand held mixer adding a dab of cream chese. Just like mashed potato. Delicious.

  13. I love cauliflower rice but then again o eat some weird stuff 😜 but with curry on top it is really delicious. That bag would have confused me so much! What a lovely gift, nice work Lacy! I went on a shopping spree today and bought some new clothes, we have a few weekends away over next couple of months so I wanted to jazz up the wardrobe a bit 🛍

  15. Mmmmm, garlic butter and cream cheese... that sounds good. I'm glad you liked it. Mashed cauli is also really easy. I just microwave a pile of fresh cauliflower then make sure it's dry and blitz it with a stick blender and add cream cheese etc. It really is very good and if you add an egg it makes a good topping for cottage pie too.

  18. We seldom have potatoes, I use the cauliflower rice all the time, making my own. A couple of days ago, I had cauliflower, added an egg, parmesan cheese, garlic powder. Make into small patties and roast in oven for 20 minutes, or more depending how big you make your patties. They were OK but....I would rather have cauliflower rice without all the fuss.

  19. I was going to say that whoever gave you the fish platter definitely knows you. And knows you well! It is so cute. Even the plate is fish shaped. Good to know about the Caulirice. As I am now on day three of weight watchers.

  20. Cauliflower rice is pretty easy to make from scratch too. I made cauliflower pizza crust one time. I decided I'd rather just eat one piece of regular pizza lol.
