Today: well as we didn't get around to doing the grocery shopping yesterday... It will have to be done today.
After that? Not sure yet... might just stay home and try and get the washing up to date.. boring I know!
JUST REMEMBERED... we bought a few carrots on the way home from Hamilton yesterday, and I intend to turn them into baked carrot ... and freeze lots for future use:
ABOVE: ummm... we bought 20 kilos of carrots... so I think that's what I will be doing in me 'spare' time today and tomorrow!
In case you are interested:
I chop up the carrots, boil them till soft... then mash them up. Drain the excess liquid off. Cook some onion (about 1/3 the quantity of the carrots)... add to the drained carrots. Then add as many beaten eggs as you think it will need to become a firm consistency once cooked... add some grated tasty cheese, some chopped up parsley and any other herbs you fancy... bake in the oven at around 200 degrees C until cooked. Trial and error on how long.
I never did get a 'recipe' as such for this, just word of mouth type of thing.
I HATE cooked carrots, BUT LOVE LOVE LOVE this dish! So, don't go ikkkk if ya hate carrots cos I assure you, this is worth trying if nothing else. *smiles* If ya do hate it... feed it to ya kids!
This dish is lovely as a side at dinner time... or on it's own for lunch (which I intend to do).

ReplyDeleteGuess what I'll be making this week LOL. I do a Pumpkin Dish that is a bit like this. The only difference is I beat the egg whites & fold in after adding the yolks to the mashed pumpkin. :)

ReplyDeleteI love carrots so eat the raw, boiled, mashed with almost anything. A casserole is not a casserole without carrots. My cannot live without veggies are onions and carrots.

ReplyDeleteI am seriously not trying to sabotage your eating, but if you want a really good family sized carrot cake recipe, I'll happily post it on here (it is the one from the big red Alison Holst book).
ReplyDeleteI don't even like carrot cake much, but make this to get rid of carrots sometimes and always get a "best carrot cake ever" reaction to it. Say the word, and I'll put it in your comments.

Family Carrot Cake

3/4 c oil
2 cups raw sugar
2 t vanilla
3 c (350g) grated carrot
2 cups wholemeal flour
1 c coconut
2 t baking soda
2 t baking powder
2 t cinnamon
3/4 c apple juice
Put eggs, oil, sugar and vanilla into a large bowl, beat to mix thoroughly, then fold in grated carrot.
Toss all the dry ingredients together, then fold them in carefully, adding apple juice. If it gets too wet, leave out last 2-3 T of juice.
Turn into a large lined tin and bake at 180 degrees Celsius for 45-60 minutes. Ice with cream cheese icing or lemon butter icing.
Do you have a preference? I can give you both if you like. I often us orange juice if I don't have apple, works just as well.

Cream cheese icing:
ReplyDelete4 T cream cheese
2 T butter
1 t vanilla
3 c icing sugar, sifted
Soften cream cheese and butter in microwave for 20-30 seconds or on stove top. Mix in vanilla and icing sugar.
Lemon Butter Icing
2 T butter
3 T lemon juice
3 c icing sugar, sifted
1 t finally grated lemon rind (optional)
Soften butter with lemon rind and juice, then add icing sugar and mix til smooth.
I've tried both and get good reports on each.
