YOU ASKED, I DELIVER

Well... I've had several requests for the Seed Loaf that I made yesterday, so here it is:

Super Seed Bread


Ingredients

  • 1 Cup of Ground Almonds (120g)
  • 3/4 Cup of Sunflower Seeds (110g)
  • 3/4 Cup of Pumpkin Seeds (110g)
  • 1/2 Cup of Sesame Seeds (75g)
  • 1/4 Cup of Chia Seeds
  • Pinch of Coarse Salt
  • 75ml of Almond Milk
  • 5 Eggs
Bread doesn’t get any easier than this. It’s also easy on the tummy as it’s grain free and it’s a great low carb option that’s high in protein. It’s my go-to at the moment, easy enough that you can make a fresh loaf at the last minute and yummy whether you’re after sweet or savoury. It’s incredible with scrambled eggs or creamy avocado and pretty irresistible slathered in almond butter. You can use whatever seeds you have to hand, but stick with the total amounts stated to avoid any mishaps!

Preheat the oven to 180’C.
Combine all of the dry ingredients in a large bowl and mix well.
In another bowl, whisk the eggs and then stir in the almond milk. Gradually pour the egg mixture into the dry ingredients, while stirring.
Grease or line your bread tin (1lb tin). Pour the mixture into the tin and bake t 180’C for about 40 minutes, or until a knife inserted into the middle comes out clean and it’s golden and crisp on top.
Let cool on a wire rack for 10 minutes before serving.
It has a distinct flavor, you are either going to love it or hate it.  Stew really liked it, Griffin hated it... I like it, but not on it's own.
I'm relieved it's Friday.  I'm not enjoying my own company right now.  It gives me too much time to think, mull shit over in my head.
And let me assure you, there's plenty to mull over right now!  Seriously, I could write a bloody book about my dysfunctional family.
Sometimes I just wish I could fly away and never have to deal with any of them again.
I'm talking about EXTENDED FAMILY in this instance, not immediate family.  Breathe easy Stew!  lol
So I don't know what I will be doing today.  No idea at all.
Trying not to mull?  Maybe do some sewing?  Housework... well that's a no brainer.
Right, I will go and start the day.
ONWARD...

Feeling a bit shaky this morning.   Waiting to see if I have a Hypo... sure feels like I could be heading into one?  Got me trusty sweets on hand if I do, so don't worry.



CORONATION STREET:  Here in New Zealand we are about 18 months behind Britain.  So TVNZ, in their infinite wisdom, have decided that next month they are going to JUMP us ahead 18 months, so we are up to date with what's current in Britain!

Oh, they are going to do a 2 hour 'Special', to highlight all that we will MISS, and so we are not left wondering what the fuck is going on!

Nice one.  I'm not a fan of this idea at all.
WE CAN watch the episodes we miss, all 18 months of them, which will be on at some random time during the day, if we want, while still watching the new, current episodes at night apparently.

Stuff that.  I don't watch daytime TV at all, except when I sit down for lunch.

SO... I am now going to dedicate an hour or two a day to read all the episodes TVNZ is going to skip!  I reckon come June 10th when they start broadcasting the 'up to date' episodes, I will have caught up by reading it all.

So, today I start.  I hope to get through a month's worth today. 

Today has been shit.  I'm depressed.  Family issue just got to me, I tossed and turned half the night, then today?  Moped. Felt yuk.  No motivation to do a bloody thing.  So I didn't.

Total waste of a day. Wish I didn't let shit get to me so much. But it does.  I hate discord, feeling like everything is out of sync.  

I have not even planned any dinner, just told the family it's left overs from the fridge.  We do have plenty in there, so I'm not even feeling guilty.  Waste not, want not and all that.


As far as I'm concerned, today is done.  Coronation Street is on later and that is all I have to look forward to, before going to bed.

  1. Have you been yo the library in Cambridge. You might find a book you can get into. A reading book to help you relax and take your mind off the real World.

  2. Having a hypo (or a hyper) episode sucks. And you don't necessarily have to be diabetic to have them. I get them from time to time since my surgery. If I've had a lot of sweet things without balancing it with carbs, I will have an attack - hot flush, sweats, shakes, nausea, feeling faint. It's truely horrid. And if I go too long without eating anything, I'll get the same.

    And any diabetic will tell you, always keep something sweet on hand to balance an attack. In Australia a few years ago, they ran a campaign using Jelly Babies to promote diabetes in children awareness. Good luck, and don't worry, it happens to everyone at some time. Just keep those barley sugars handy and once you recognise the signs, make sure you pop one. I'm really happy you've found a way to keep your blood sugar in check. I still strongly recommend using the guidance of a diabetes dietician. That's what they're trained to do. Love ya xx

    Sorry you're feeling down and a bit put out with "stuff". I agree that library books are a delight to me and might be to you, too. The books by Alexander McCall Smith about his sleuth in Scotland are fun to read. The Aunt Dimity series of books by Nancy Atherton are fanciful, enjoyable mysteries but do read them in order. The Cottage Tales of Beatrix Potter by Susan Wittag Albert are also light mysteries set in the Lake District with Miss Potter herself as a character (the animals talk amongst themselves, too). If you enjoy really scary books I cannot suggest a one as those don't float my boat.

    Perhaps your library has quilting books? Our library does and they're wonderful, inspirational eye candy.

  4. Well done - now you have a project to take your mind off all the other crap going on - Coro Street!!!

    Hope you are feeling better soon. I know it is frustrating and all day everyday revolves around what you should & should not eat and what to cook for meals etc, this could be your side project to the Coro St one, it won't be long before you get a recipe repertoire for the new style of eating and it will become second nature, hell you are effectively changing a lifetime of eating habits so it is not going to be easy overnight.

  5. As you know I caught up with Coronation Street a couple of years ago and now watch it as it happens in UK. Reading up on the episodes is a good way to catch up as much as you can but I recommend you watch a few of the actual episodes - especially the Pat Phelan ones!! OMG they are good. I have found a great website where they are all free and easy to watch - might be handy if you especially want to watch a particular episode while catching up!! Email me if you want the details... it's where I watch all my Coro.

  7. That bread looks interesting! I have a keto recipe I want to try too. I'm just used to buying a Helga's low carb but at something like $4AU a loaf I might have to find an alternative. I hope the low carb is going well for you, I've not long started but managed to cut back on my sugar. I get those shakes too but my blood sugar is fine. Apparently. I just drop a teaspoon of sugar under my tongue if I can't get something sweet into me quickly. Hope the next sticker works! I know I would really have to psych myself up to prick a finger too. I can't stand the sight of blood, especially if it's mine.

  9. What a weird thing to do. - re Coro. We watch Eastenders, and we were a couple of years behind, but they put it on double episodes four nights a week and eventually we caught up, now only a couple of weeks behind.

    Hey chris i agree with linda definitely watch the pat phelan ones they are so good. Im up to date with the uk ones as well so it doesn't affect me but i dont think tvnz have been very smart skipping 18months worth - thats a massive jump!
