BETTER SAFE THAN SORRY

Marley and Denim have yet to learn about keeping out of the kitchen!
So, when we are working in there, we are constantly having to shoo them out.  Sometimes a dozen times an hour.

It's dangerous.  There's been several instances where I've tripped over one or other of them.

Stew got mad as hell with one of them a couple of night's ago, so I decided to do something about it.


ABOVE:  I picked up the baby playpen off a local Buy, Sell and Swap group.  Super cheap too, so I'm really happy.
It's very lightweight, so easy to move when necessary.

Better to be safe than sorry eh?  Poor family, there's gates and barriers all over the house!

Last night, before I went to bed I decided to check out some recipes for almond bread.  Some seemed to have far too many ingredients and were long winded.  Then I came across this one:


90 Second Keto Bread In A Mug

This amazing keto bread is made in 90 seconds in a mug in a microwave! It toasts beautifully and tastes like real bread! No carbs and no gluten! This is the only keto bread recipe you'll ever need!

Ingredients
  • 3 tbsp almond flour
  • 1 egg white
  • ½ tsp baking powder
  • 1½ tbsp butter

Instructions
  1. Put butter in a wide microwave-safe mug (or small microwave-safe cereal bowl). Microwave for 10 seconds or until melted.
  2. Add almond flour and baking powder to melted butter and mix until combined. Add the egg white and mix until combined.
  3. Put the mug back in a microwave and microwave on High for 90 seconds.
  4. Remove the keto bread from the mug and slice in half (like English muffin).
  5. If desired, put the keto bread in the toaster and toast it.
It sounded too good to be true!  But, as it was super quick and easy, I decided to make one right there and then.  (My almond meal is coarser than what was used in the above recipe I do believe).


ABOVE:  Once I had made it, I chucked it in the toaster.  And tried it with a little butter.

And well... it was quite good! I could taste the egg right away, but then it faded out.  It really was like eating a piece of toast, but with a slightly funky taste/texture.

On a scale of 1-10, I'd give it a solid 8.  Not that I have ever tried almond 'bread' before, so can't compare it to anything YET.

Now, today?  Definitely going to be doing some sewing.  I got none done yesterday like I had planned.  I was busy doing other stuff, and enjoying the day.  

I've been buying a few pavers to put down the 'dog side' of the house, so will go and get a couple more today, and some vege plants.

 OH and I will be making that Almond Flour bread today!  Like many things I didn't get done yesterday, that was one of them.

If I make it this morning, it will be ready for me to try for lunch, AND compare it to what I made last night.

I would love to make a pizza for dinner tonight!  Funny how you crave stuff that you should not be eating!

At least I'm not craving chocolate! Or ice cream.  Or cheesecake.  Or... OK... maybe I am.  *lol*  

ONWARD...

The loaf is in the oven.... wasn't difficult to make at all.  Should be finished around 11.45.  Excited?  MUCH.  *smiles*

On to some housework... and later off to town.

A dear wee lady from the patchwork group.  She came to check up on me cos I've not been all year!  Well... I've been busy most Mondays!

Anyway, I promised I would try to get there next Monday.

As for that loaf... it's still cooling.  I'm popping out to town now before I get distracted by anything else.

The loaf is DELICIOUS!  A bit crumbly, but I've put some margarine and sliced tomato on top... YUM!  And there is plenty left for Stew to try it at dinner time.

Keto Cheese and Bacon Bread

This loaf has all the best things about keto, loaded with bacon and cheese, eggs and almond flour. Perfect for breakfast, lunch, dinner or a snack!

Ingredients
200 grams bacon
1.5 cups almond flour
1/4 teaspoon salt
1 tablespoon baking powder
4 tablespoons butter melted and cooled
1/3 cup sour cream
2 eggs
1 cup grated tasty cheese
Instructions
Preheat the oven to 150 degrees and line and grease a loaf pan (I use silicone - nothing sticks to it!)
Dice the bacon rashers and fry in a large frying pan until just crispy. 
Meanwhile, in a medium mixing bowl, whisk together the almond flour, salt and baking powder, breaking up any lumps in the flour.
In a smaller bowl, whisk together the sour cream and eggs until it is a smooth consistency. 
Once the bacon is cooked, combine the almond flour with the sour cream and eggs and mix thoroughly until combined. 
Stir through the melted butter and then gently fold through the cooked bacon and cheese. 
Pour into the prepared loaf tin and bake for 45 - 50 minutes until a skewer comes out completely clean. Let cool before slicing, if you can wait!

I feel like it could have had less bacon in it... but that's only because we have overdosed on bacon lately!  It really is yum though.

We had some sad news this afternoon about an extended family member's death.  I'm in shock and so very sad right now for his family.  He was only a young man, with two teenagers at home.  RIP J. 

I'm going to sign off for the day now.  Just want to sit and reflect, feeling really sad.

  1. I'm glad you are trying new recipes, it really is a matter of finding a recipe that you like. If you really want to make pizza I have two great recipes. The second one (after the fathead recipe) is really good and makes a solid base just like normal pizza. I've actually not tried the fathead one yet but might this weekend as I've bought all the ingredients ready to go. My recipes are linked on the top left of my blog (those three little lines).

  4. I don't think the cheese and bacon loaf mixture would make a good pizza base, not dense enough? We regularly make 'pizza' using minced beef or Chicken as a base. There's lots of recipes for 'Meatza' around, the chicken one is just chicken breast pounded thinly season with some s and p and paprika and quickly browned, then top with tomato paste and all your pizza toppings and baked for about 20 minutes. So good!
